Obsessed with Peanut Butter?

Okay, so I am a pretty normal pregnant woman…in both of my pregnancies I have only have one or two random strange cravings (chili cheese fries, anyone?). But there has been one item that I have been obsessed with during both of my pregnancies and only during my pregnancies…and that is peanut butter! I absolutely love it on a toasted piece of bread or English muffin drizzled with a little honey or in accompaniment with apple slices. I have to have it practically every day! Good thing Costco sells organic peanut butter for such a good price! ;)

I guess it is just another good way to get my protein count.

I am 25 weeks along and counting! Baby is healthy and growing…I feel like there is a tornado taking place in my tummy most of the time due to the activeness of this little precious life.

Local Christmas Events

For all my local friends, here are a few family friendly local Christmas events that take place in the Vancouver/Portland metro area. I sure love the holidays and all the fun activities to participate in! I would not recommend trying to hit everything, as that might just overwhelm or make your holidays more stressful. Pick one or two and strengthen family relationships by attending together!

Holiday Eggnog & Eggnog Ice Cream

Can you really enjoy the holidays without eggnog? At least not at our house! ;) I am always counting down the days till it comes into the store, and yet in reality I can have a homemade version year round that is far more nourishing! I have been experimenting with making homemade eggnog of late…so here you are! Enjoy a good quality protein holiday drink without extra preservatives and additives right from your own kitchen! Yum!

Holiday Eggnog

1 1/4 cups whole milk, preferably raw (using heavy cream makes for a thicker and creamier version like you would find in the store)
2 egg yolks, raw
2 tsp vanilla
dash of salt
1/4 tsp nutmeg
1/2 tsp cinnamon
3 Tbsp sweetener – honey or maple syrup (maple syrup is the best or half and half)
2-3 ice cubes

Combine all ingredients in a blender. Top with an extra dash of nutmeg!

Eggnog Ice Cream

Double the recipe above, replacing half of the milk with heavy cream (optional, but it will make a more creamy final product), and increase the sweetener to about 1/3 cup, and put into your ice cream machine. A double recipe makes about 1 quart of ice cream or approximately 4-5 servings. Note: when preparing ice cream, you will desire to make it sweeter than you might think in the preparation process as it will lose some of the sweetness in the freezing process.

Becoming a Woman of Prayer

My constant prayer is that the Lord would make me a woman of prayer. If there is nothing else I can do to serve others and further the Great Commission, I can certainly be a prayer warrior around my home! I can saturate my home in prayer while I clean the dishes, make a meal, or changing a diaper. I can send forth prayers on behalf of our nation and the souls of the lost while running an errand.

As John Piper says, “A woman on her knees sways more in this nation than a thousand three piece suited Wall Street folks.”

I can be a faithful prayer warrior on behalf of my husband and children as my first and primary mission field. I can bless and do good to my husband (Proverbs 31:12a) by diligently laboring in prayer on his behalf. Satan desires to destroy husband, his character and his leadership in our relationship. Satan desires to steal away the hearts of our children(1 Peter 5:8-9), thus even greater motivation to be on the front lines, alert, equipped with the Word of God, praying His truth over our households.
