Pumpkin Patch & Menu Plan – October 20-25

It has been a bit of a lively week over here as of late, with the combination of a teething and sick little girl, in addition to some circumstances which led to a few gatherings of dinner guests at our home. I honestly love impromptu hospitality the best all in all! It’s fun being flexible! I have been craving pumpkin pie and thus I am desirous of experimenting making a pie from scratch this week with our pumpkins from the patch. Going to try Kimi’s recipe this week. Should be fun!

We had so much funny looking and touching animals, picking out pumpkins, and taking a hay ride. I love spending time as a family in these simple and delightful ways!

On to the menu plan…trying to make our grocery budget stretch this month!  I completed my usual monthly grocery shopping trip and normally I might take a brief re-stocking trip half way through the month. This month I am being adventurous again!

Monday
Prep: make butter, soak oatmeal, soak cornbread
Breakfast: Kefir Smoothies, Hard boiled eggs, blueberry crumb muffins
Lunch: Macaroni & Cheese (using raw cheddar, brown rice pasta), stemmed veggies
Dinner: Homemade Tomato Soup & Grilled Cheese sandwiches, salad

Tuesday
Prep: soak crepe batter

Breakfast: Oatmeal, apples, raisins, bananas
Lunch: Peanut Butter & Jelly, applesauce
Dinner: Chili & Cornbread, acorn squash

Wednesday
Prep: soak oatmeal

Breakfast: Smoothies, toast, eggs
Lunch:  Baked Potato Bar (using leftover chili)
Dinner: Chicken Curry Crepes (using a soaked crepe batter – share recipe soon!)

Guests for Dessert: Homemade Pumpkin Pie

Thursday
Prep: soak brown rice

Breakfast: Oatmeal, apples, raisins, bananas
Lunch:  Salmon Melts
Dinner: Peanut Stir Fry (w/carrots, cauliflower, etc), Brown rice

Friday
Prep: soak pancake batter

Breakfast: Smoothie
Lunch: Egg Salad Sandwiches, carrot sticks
Dinner: Marinated Chuck Roast, Green Salad, sweet potatoes

Saturday

Breakfast: Pancakes, oranges
Ladies Tea Luncheon - I will be hosting another little ladies tea at my house for a time of Godly fellowship and refreshment!

Dinner: Party at Family for dinner

    Everything sounds so delicious. I am definitely going to try those muffins too. We all love muffins for breakfast at my house.

    The pumpkin patch looks like a beautiful day of family time too. I agree, those simple moments are certainly some of the best.

    Lindsay, that chicken curry crepe recipe looks so interesting. Have you tried it before? What did you think? Do you use Sue Gregg’s crepe batter?

      Stephanie, I have not tried the chicken crepes yet, but it sounded fabulous! I’ll let you know how it goes. And yes, I use the Sue Gregg crepe batter and love it!

    ok, so what do you do with your little one and hubby during the luncheon? Or ladies’ nights? I’ve thought of doing one, but need to keep my 3 year old busy. Ideas?

      That is one reason I host it on a Saturday, during my husband’s day off. He usually will watch the little one and then she will go down for a nap half way through the luncheon as well. Previously he has gotten together with one of the other guys that was staying home to watch little ones and they took care of the kids together. I keep it short (just two hours) so we aren’t separated too long, but the ladies and I are able to get a little break and enjoy some fellowship.
