Menu Plan – July 21-27

I honestly have been having a hard time with meal planning lately…it has been getting me sick to my stomach to figure out what to eat. It’s not helping that I am getting tired of all my healthy recipes (which specifically frugal to stay in budget), and tired of my CSA (too much greens and nothing else, and bitter greens at that!). Maybe I can blame it on my pregnancy? That probably won’t work. What’s a girl to do? I am thankful for all the other menu ideas posted on Organizing Junkie…maybe doing some excavating will help me out! ;) Just want you to know that I am not perfect in this whole natural eating pursuit…I have my breakdowns.

We are busy all week serving in local mission & service opportunities which we are really excited about, so we will have picnic lunches each day. I don’t have lunch meat, so I am trying to think of packable cold foods. Love any suggestions! Other than that, our menu is pretty simple.

Monday
Prep: soak bread, soak oatmeal, cook black beans for dinner, thaw chicken, make egg salad mix Mon night for Tues lunch

Breakfast: Kefir Smoothie, toast
Lunch: Leftover pizza
Dinner: Southwest Chicken Salad

Tuesday
Prep: bake homemade bread

Breakfast: Oatmeal, raisins, coconut flakes, almonds
Lunch:  Egg Salad Sandwiches, fruit
Dinner: Nachos (chili, cheese, guacamole, sour cream, salsa, etc)

Wednesday (we are home this day for a rest)
Prep: soak bulgur, soak lentils for Thursday, thaw cod, thaw chicken for Thurs lunch (make Wed night)

Breakfast: Smoothie, muffin or toast
Lunch: Tomato Soup, grilled cheese sandwiches
Dinner: Cod with Italian Crumb Topping, brown rice, Salad

Thursday
Prep:
cook lentils

Breakfast: Breakfast Bulgur
Lunch: Honey Mustard Chicken Sandwiches
Dinner: Sweet & Sour Lentils

Friday
Prep: soak pancake batter for Sat

Breakfast: Fruit Salad, yogurt, homemade granola
Lunch:  Peanut Butter & Jelly, celery & carrot sticks
Dinner: Homemade Pizza, Salad

Saturday

Breakfast: Pancakes, oranges (this is our standard Saturday breakfast! It’s so good!)
Lunch:  ?
Dinner: Final dinner together with team from our outreach

Sunday

Breakfast: Homemade Granola(quick and easy breakfast on the run to church!)

    Young children loves baking, I have recently got a cooking kit for kids and I discover that they really like it and take pleasure in helping me. I have recently bought recipe ebook with children recipes.

    Hi Lindsay, sorry to hear you are not feeling good. I pray that you have a great week, and still get some rest. I dont know if you guys like hummus, but that is good protein, or just simple cheese and veggie sandwhiches!

    When you made the breakfast bulgur, did you soak it or just cook it up in the morning? Did you use kefir instead of buttermilk? Thanks!

      To tell you the truth, I honestly have not gotten around to trying that recipe yet. It has not appealed to me lately in my pregnancy (I don’t know if it is the combination of bulger with peanut butter or what?). When I get around to making it I would definitely soak overnight in kefir. Keep me posted if you try it.

    Don’t feel bad! Pregnancy is REALLY REALLY tiring! It’s all I can do to keep up with the basic chores and feeding my kids during the first 3 months of endless nausea and the last month or two of growing fatigue and discomfort, it is so hard for me to cook or plan menus and I absolutely LOVE cooking and homemaking normally! Things that have helped me:
    *Simple meals with little prep
    *Bulk cooking, even if you just double one night’s meal you have a night off later in the week
    *Cooking in the morning (making supper when you have a little more energy is so much better than getting to the “pit hour” with cranky kids and succumbing to fast food or frozen pizza.
    *Spending a little more. This may not be an option for you due to income but I find that spending a little more at the grocery store during pregnancy so I can buy more prepared foods is definitely cheaper in the long run than eating out several times a week due to lack of motivation.
    *Do a once-a-month freezer meal making session with your mom or sisters and then take a month off from cooking!
    *Sandwiches! There have been so many nights that I’ve made sandwiches for supper due to the heat and pregnancy fatigue. Try new varieties to keep it interesting.
    *Have basics on hand in the pantry/freezer that your hubby enjoys and buy things that sound good to you so you have some different things on hand. For instance, you may not feel like what they are eating for supper, but if you have several kinds of fruit on hand, some cut up veggies, some cottage cheese or bagels or english muffins with peanut butter, etc. something is bound to sound good.

    I definitely plan to check out the orgjunkie site to get some new motivation for meal ideas in the summer since I need all the help I can get!

    I can totally understand– I am not the best meal planner during my first or last 2 months of a pregnancy– fatigue, and just not being REAL hungry— it’s tough!!

    I do enjoy reading your blog– I don’t comment often– but always enjoy it!!

    About those greens…you could freeze them and use them in casseroles and soups in the winter.

    If you need inspiration, maybe poking around on some “gourmet” food blogs would help. Sometimes pretty photos are all I need to give me ideas. I just received the Sue Gregg set, and that’s inspired me, too. Especially the children’s cookbook with all its simple ideas!

    Keep up the good work! If you’re getting tired, you could try cooking extra some nights and then having it for lunch the next day or freezing it for a future day so you can have a “vacation”. I love doing that.

    Me too Lindsay- early pregnancy means for me that things I normally eat and cook for the family smell terrible and taste even worse! I’m hoping it will get better- the baby is probably tired of toast and tea.

    You could maybe try a cold fritatta or pie for a picnic lunch. Or savoury muffins?
