Beginning Learning with Karis

Chrissy asks: I was curious what kind of things do you do during the day with your little one. Do you work on anything educational or just teach her as you go.  Do you just let her be a little one without structured learning yet.  I am not for sure of her age.  Just curious?

Karis is currently only 14 months, so I have not as yet scheduled any structured activity time. As she becomes more interested in reading together, I will be start incorporating more things this fall. She is not at that stage yet where she can sit still for very long periods of time.

I love giving Karis a good amount of time to play by herself near by me. While I am making dinner or such, she will be exploring. She loves learning how to take things out of the cupboards and drawers in the kitchen and put them back. This is all part of her learning experience. It is also refreshing to allow her the opportunity to entertain herself without my constant involvement.

That being said, I am just beginning to use materials such as Slow & Steady, Get Me Ready by June Oberlander (thanks to Stephanie’s recommendation), which has wonderful weekly activities for ages 0-5. I have noticed that it assumes your child can walk at one year, week 1, which is really not that realistic for Karis right now, so I have starting back in the 0-1 category.

Just yesterday we sat down and played with different containers and lids and talked about taking the lids off and on, and which lids go on which containers, and allowing her to take them off and on. This activity was working on such skills as matching, eye-hand coordination, learning to follow instructions, etc. She really enjoyed it, but again, only lasted about 10 minutes. It was a fun learning activity, and this book is full of simple activities like these.

11 Best Foods You Aren’t Eating

Did you know that cinnamon can help regulate blood sugar and cholesterol or that turmeric is the superstar of spices? How about the fact that pumpkin seeds are loaded with magnesium? I would have never thought that canned pumpkin is high in fiber and immune-stimulating vitamin-A! I can’t wait for blueberries to come on!

Read this excellent article on 11 foods you probably aren’t eating and how to start including them in your diet! The major bonus of these recommendations is that the majority come very low in price!

Number one on the list was beets! I love them grated on top a salad along with pumpkin seeds and grated carrots (as seen above)! Yum! Eating two of these powerhouses in one. It’s so beautiful too, don’t you think? Pumpkin seeds can be ground up in a coffee grinder to throw in oatmeal, smoothies, or pancakes!

Here is an awesome recipe for cabbage that we tried this week! Fabulous!

Browned Cabbage with Horseradish

Serves 4

1 tablespoon butter
1 large onion, diced large
About 1 pound cabbage, sliced thin (1 pound is about half a typical head)
1 teaspoon sea salt
1 tablespoon mustard
1 teaspoon (or more) horseradish
1 teaspoon flour
1/2 cup water
Salt & pepper to taste

In a large skillet or Dutch oven, melt the butter til shimmery on medium high. Add the onion, cabbage and salt; stir til covered with fat. Allow cabbage to cook, covered, for 10 minutes, letting it brown. Stir only very occasionally. Meanwhile, whisk together the remaining ingredients. Stir into cabbage and let cook 1 – 2 minutes til cabbage thickens slightly. Season to taste and serve.

Strawberries!

Here are the results from 4 flats of strawberries:

13 gallon size bags of strawberries for the freezer
9 1/2 pints of honey or rapadura sweetened jam (thanks to Pomona’s Pectin)
1 large container of homemade strawberry ice cream

I think it was a profitable day, don’t you?

Simplifying Our Priorities

Jen writes:

How on earth do you find the time to fit it all in? How do you enjoy your family, clean your home, cook such enormously nutritious meals, research everything, blog, etc., etc. I just can’t imagine how you do it without burning out. I can barely keep up with the basics, and I feel stressed ALL THE TIME. Any tips?

Up to this point in our simplifying series (on Wednesdays), we have been discussing several different ways to simplify your lifestyle, in menu planning, in slowing down, in scheduling, and the like. These are helpful tools for me in maintaining peace in my home, but all these things can be done and still result in stress and frustration if we don’t have our priorities in the right place. I have been there! By God’s grace, I have come to realize it all comes done to the question: Amy I walking with the Lord? Did I commune with Him today?

The moment we see stress or frustration coming out we need to search our heart with this question!
